Made from predominantly 2023 Dabinett with just a whisper of Bisquet slipped in for softness, this is a glorious, starlit night of a cider.
Dabinett is a bold bittersweet which can have a structured, bitter finish but when given time to ferment and mature in oak casks, the softness of the apple is revealed through micro-oxygenation.
The cider develops over time, allowing complexity to be unlocked as each layer of tannins removed by maturation allows new flavours to express. A delightful cider.
