Cherry-wood smoked saison

Our affinity for smoke beers continues with the release of Waits, brewed in collaboration with Bizarre Brewing.

A light saison, Waits is brewed with barley and Elwha River spelt from @lincmalt and black cherry smoked wheat malt from @sugarcreekmaltco. Sugar Creek Malt Co. uses whole black cherries to smoke this wheat, imparting soft aromas of smoke and fruit without the robust Rauch flavor profiles in the pallet.

In true collaboration form, this beer is the sum of both breweries. Waits was open fermented in our totes with Bizarre’s house Kolsch strain and an early fermentation dry hop with Mandarina Bavaria. After ten days, we transferred this batch to our conical fermenters and pitched our house saison yeast of wild and feral yeast and bacteria.

Fermented to dryness Waits presents a pleasant aroma of smoke and stone fruits with lemon, bergamot zest and smoked peaches on the pallet.

Pale, tart, big smoke nose, peat? Actually cherrywood, well balanced, good brett, too.

On tap at Bottleworks, pours a lightly hazed blonde with a medium white head. Aroma has a nice smoky character, light cherry, and some rustic saison yeast. Flavour is clean and complex, with a nice smokiness, rustic saison yeast, and some bugginess. Grainy, nicely carb’d, with great smoke and yeast expression. Excellent.

On tap at Bottleworks. Pours clear blonde with a white head. Lovely saison yeast and light smoke on the nose. Flavour has spicy, rustic saison yeast, smoky wood, and a slightly herbal finish. Fantastic.
