Il Grifo is a "German-inspired" Bock that has been hopped up with Czech & German hops, similar to an Italian Pils. For this beer we used Saaz, Saphir, and Mandarina Bavaria for some noble, earthy, and floral character backed up with a bit of citrus. German Vienna and Munich malts balance the hops with malty sweet notes of honey and bread with just a hint of caramel. It may not be traditional but it's tasty!!

Amber with a slight haze. Aroma has some bubblegum, so yeah, this is meh, a touch of toffee, low bitterness and the bubblegum is absolutely distracting. Is bubblebum part of the Italian bock style?

On tap at Wheelie Pop, pours a clear amber with a small white head. Aroma is bizarre, with a strange vegetal character, bready malt, and toasted nuts. Flavour is messy, with bready malt, toasted nuts, and herbaceous notes. This is a total mess.

On tap at Wheelie Pop. Pours clear light amber with a white head. Waxy, bready malts on the nose. Flavour has a fairly thin, dry malt profile, with some stale grass. Not very good.
