It's cyder …but not as you know it. Reimagined in order to redefine what we expect from the West County's signature tipple, Wyvern Wing is our premium expression. Crafted like a wine, it highlights all the refreshing and food-friendly qualities of our beloved apple.

THE INSPIRATION
Wyvern Wing was inspired by the lime-fresh Rieslings and perfumed Pinot Gris of France's Alsace wine region. Made solely from Braeburn apples, the cyder is cold-fermented in our cellar for up to six months, using precise winemaking techniques to bring out the character and freshness of the fruit.

TASTING NOTES
A blissfuly fresh & elegant modern cyder, Wyvern Wing is defined by its elegance and freshness. Aromas of crisp green apple, gooseberry and citrus blossom lead to a gently dry, still palate that's both rounded and zingy. It makes the perfect pre-dinner aperitif, or a mouthwatering partner for fresh fish, scallops and smoked chicken salads.

Our cider is spelt with a ‘y’ to preserve the old West Country tradition, originating from a time when it was used to indicate superior strength and quality.

750ml bottle from the Newt. Clear pale gold colour, afew short-lived bubbles on top and aroma of apple, musty, winey notes. Taste is sweet, fruity, appley, gooseberry, white wine, with some tartness and citric acidity. Light to medium bodied, light carbonation, drying finish. Quite drinkable.
