Brewed only once before, this beer returns in a similar fashion to the previous example.

In what has become a standard method for our mixed culture beers, the barrels chosen for what would become Time in a Bottle began their journey with open fermentation in our coolship, fermented entirely with our unique house culture. A two to one blend of Buckwheat Saison, and our traditional Saison were selected to be the host for the Citrus Blossoms from the folks at Bhumi Growers @yuzulemons.

These small, delicate flowers pack a bright and vibrant floral citrus character, that paired perfectly with the base Saison. After 4 months of conditioning in stainless on the the blossoms, Time in a Bottle was laid to rest for 15 months in said bottle.

We detect aromas of delicate floral orange, sweet tarts, and lemon-lime with hints of light dill and oak. Complex, delicate and contemplative.
