Undated can from the brewery fridge, drunk 10/14/25.
Clear at first, but I added the sediment from the bottom, for better or worse. Medium-sized, white head, steadily to spotty cover. Lightly hazy copper-tangerine.
Peach-papaya with a healthy maltiness to balance (big white bread and light biscuit character). Neither too woody nor piney despite the Azacca and Simcoe. Clean and bright.
Juicy and solidly bitter. Lots of pine, wood, slight resin. Peppery spice and grapefruit join in on the finish as soft, well-attenuated malts add bread and sourdough. Huge fresh yeast character and tons of mixed citrus lingering. Clean and very flavorful with excellent malt depth and attenuation. Yeah, it's on the bitter side for IPAs, but I just can't be mad given the state of IPA currently.
