The Kölsch style harks back to Cologne, Germany during a time when top-fermenting and bottom-fermenting brewing styles were at odds with each other, where the local council was mandating against bottom-fermentation (lager yeast). In the end, the forbidden love between ale and lager prevailed, fermenting with ale yeast and finishing with cold lagering.
