The fourth chapter in our ongoing collaboration with Simon Rogan’s Our Farm will bring together two extraordinary ingredients, grown just a few miles from the brewery at Our Farm. Juicy, tart, inherently Cumbrian damsons meet the delicate herbal character of perilla, layering very subtle notes of anise, liquorice and cinnamon over a softly sour base.

Had to look up Perilla, this is a new ingredient for me in beers, and this one does have a mild floral influence, although its damson is still dominant in a dryish tasting beer.
