Saixon is a saison - not a typo. But it’s different. The saison style traces its origin back to Wallonia, the predominantly French-speaking (and bordering) region of Belgium. We asked ourselves what the style would be like if the pendulum swung East and took root closer to the German border of Belgium. And then we brewed it.

Presupposition meets new inspiration in this Belgo-German hybrid. In addition to the dry, crisp and funky notes you’d associate with the classic saison style - and the wildly traditional use of Brettanomyces, Saixon also features three generations of German hops: old school (Hallertau Mittlefruh), second wave (Opal), and new school (Mandarina Bavaria and Hallertau Blanc). Poured from a 750 ml bottle. Aroma is somewhat fruity and estery with some bubblegum, banana and pear. Some medium light Brett notes add some baryard, earthy notes as well as some phenolics. Moderate grassy, herbal hop notes. Light floral notes. Hints of grain and wheat. HInts of citrus. Pours a hazy, pale, golden straw color with a rather large, fairly thick and fluffy, white head that slowly recedes. Light lacing and faint legs. Flavor has a light sweetness with medium light grain and cracker malt notes. A faint hint of acidity with a touch of citrus and pineapple. Some medium light phenolic notes of grassy herbs with a light barnyard must. Some esters of banana and pear with some lighter stone fruit and floral notes. Medium high bitterness with some grassy, herbal hop notes that are accentuated by the phenolics. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a pretty average saison. I prefer them a bit brighter and fruitier with less herbal and phenolic notes. A bit on the bitter side as well. I think adding a rather phenolic Brett strain ma have been a mistake.

Bottle thanks to William. Pours a cloudy orange gold with no head. The aroma is strong brett, oak, funk, honeysuckle. Medium body, strong brett, pepper, funk, oak, light dry finish, very good.

A lightly hazed blonde saison with a thin white head. In aroma, sweet fruity malt with light curacao, light grassy hops, light mineral notes, smooth and perfumy. In mouth, a nice sweet fruity malt with Brett, curacao, coriander, light perfumy notes, nice and smooth. On tap at Placentia location.

750 ml bottle. Shared by DCLawyer with my friend Tyler. Thanks Jason! Mostly clear orange with off-white head. Aromas of citrus, herbs, light Brett, funk. Tastes of Brett, funk, citrus fruit and peel, herbs. Medium body with a dry finish.

Draft at Lost Dog Alexandria. Slightly hazy yellow color, white edge head. Aroma of funky fruit. Taste is peppery and bitter straw. I like the reasonable abv.
