Undated 750mL which is odd for JK, but I guess they only ever planned on doing this once? Whatever the case, it's the 2021 vintage, drunk 3/25/2026.
Lovely mix of Brett and light, but definite Cognac. There's a roundness, fruitiness, sweetness here that is absolutely charming. Musty basement but not hugely funky. Not leaning as much on citrusy notes; lemon, citrus rind, etc...had a lot of sours that do that lately and I'm pretty tired of it. That Cognac level is perfect, though, wow. Very enticing.
In the mouth it's luscious vanilla and sweet Cognac with a good deal of oxidation that is oddly not found in the nose. Must be the barrel character, because this is still tightly carbonated and there was a stiff pop upon opening. Going to let this sit and breath while I go take a shower.
Ok, back from shower and sure enough, the oxidation character has receded a bit. Still getting a lot of sweet vanilla and it's joined by a bit of citrusy acidity. There's nothing aggressive here whatsoever. No acetic and no harder lactic character. Just round oak, sweet Cognac and excellent malt/wheat depth and softness. The heavy vanilla and light-to-moderate oxidation character does dampen the overall brightness/power of the beer, I think. Have to compare it to 50N, which is the benchmark for cognac lambic, and it falls short because of that heavy vanilla and oxidation character, I think.
