Covered In Nothing is a brand new barrel-fermented, farmhouse-inspired Mixed Fermie™. It consists of a blend of hand-selected barrels that aged for over 15 months.
It was brewed in March of 2017 (on our original brew house) with the finest Pilsner malt, oats, spelt, and unmalted wheat. We chose a very expressive Saison yeast strain as well as one of our favorite Brettanomyces strain to co-ferment Covered In Nothing in French oak red wine barrels. We are very pleased with what it has become.
Bright citrus, ripe stone fruit, elegant minerality, Sauvignon Blanc must, damp cellar, perfectly restrained acidity. Bottle-conditioned and refined for over 7 months.
