A bit twangy and tart with evident lactic acid being a touch unrefined. Get a bit of blueberry and light salinity. Straw, cracker and baguette lingering.
Salty and tart with a bit of dough and fresh yeast. Lighter lactic acid but still lightly tart. Doughy, bready, lightly sweet at points. Nice to see this rare style, but could be a little less given to the rather unrefined lactic acid.
