Inspired by revered monastic ales, the hearty, rich character of our Dubbel incorporates Tennessee Sorghum from our friends at Muddy Pond Sorghum in lieu of traditional Belgian sugars.

375mL bottle, pours a deep dark maroon with a small off-white head. Aroma brings out a nice mix of Belgian yeast, candied sugar and dark red fruits. Flavour is authentic, with candied sugar, bubblegum, red dark fruits and light esters. Medium sweetness with medium-high carbonation. A surprisingly authentic version of the style. Excellent.

Okay Dubbel, possessing a noticeably darker, fatter bottom end thanks to sorghum being used instead of candi sugar. Bright cherry nose is a pleasant surprise, but the pour’s a bit tepid, good red-brown color yet lacking in foam or lace. Starts out with bright dried cherry and fig, undercurrents of buttered caramel and apple, then grows a mild tea-like middle backed up by a peppery bitterness. Doughy on the finish, hints of sherry and butter, a bit earthy with an underlying heavy sorghum vein. Modestly sweet fade with a yeast-tinged backbone. Good texture. Not world-class, but drinkable.

375mL cork and cage bottle. This is just not how I conceptualize this style. Body is lighter, cleaner than my schema. Sweet caramel dominates without the body and malt nuances to balance it. Just a sweet syrup at the end of the beer. Caramel brown colored beer. Not bad just highly disappointing, especially for this brewery.

Bottle. Cloudy brown with mahogany highlights. Short, light tan head reducing to a pool of bubbles. Aroma of plum, raisin, dates, toasted grain, musty basement, caramel. The flavor is moderately to heavily sweet and lightly bitter. It finishes moderately sweet and lightly to moderately bitter. Medium body, watery/velvety texture, lively carbonation. Taste of overripe dark fruit — plum, raisin, date along with a light mustiness. Chimay Red like, except sweeter (overly so) and not as much mustiness. and then there’s a light astringency in the finish — artificial sweetener/medicine. Nonetheless, really nice.
