We filled a tawny port cask with half Ashton Bitter and half Ellis Bitter from our Burlands orchard, and fermented to dry, then rested on the lees in cask for 8 months. Before bottling we blended in a small portion of our Burlands orchard blend to add some softness to the body. After two years in bottle this bold, tannic cider is coming into its own and showing its class. Drink at 12-15C with red meat, game, wild mushrooms and offal. 750ml. 7.2%.

750ml bottle from Wildings. Orangey golden colour, thin white foam head and aroma of apple, fruit, wood cask, funk. Taste is tangy, tart, appley, wood barrel, port, funky, with drying bitter tannins. Medium bodied, low carbonation, dry tart & tannic finish. Nicely drinkable.
