Drawing its name from the thirty - three layers in traditional Greek Baklava, this project started with a rich bready stout base featuring demerara sugar fermented with a Belgian Trappist yeast. We then reconditioned it on Marshall's Farm orange blossom honey for a secondary fermentation and finished the beer with a combined 25 lbs. of house toasted walnut, pistachio, almonds, and Madagascar vanilla bean. Draft. Black beer with a tan head. Chocolate and vanilla aroma with honey. Honey and chocolate flavor with nuttiness and caramel. Medium-plus bodied. Honey and chocolate linger with nuttiness.

Dark brown. Medium head. Aroma is all toasted nuts and vanilla. Boozy up front, feels thick enough but yet not enough residual sweetness. Quite fruity, I imagine the Trappist yeast is why. It’s not bad. Not best of breed, but not bad.
