Made from the unique blend of cider apples found in our orchard, matured for two years using the “method traditionelle”. This unique and artisanal sparkling apple wine, is crisp and complex and pairs well with most food

Panda at home, thanks to Ed Danlo, 22/02/2026.
Almost clear copper to golden with an off white cap that dissipates to the edge.
Nose is caramelised apples, tannings, herb, hedgerow.
Taste comprises apple skins, modest funk, tannins, herb, light acidic nip.
Medium bodied, light spritzy carbonation, drying close.
Tidy enough offering.

750ml wired cork bottle from Border Sun. On opening the cork self-ejected with a loud pop. Golden colour, thin white foam head and aroma of apple, fruit, funk. Taste is sweetish, tangy, appley, fruity, with some funky notes and earthy drying tannin. Medium bodied, spritzy carbonation, dry tannic finish. Nicely drinkable.
