Feathers in Ashes is our American cellar pilsner that was brewed with pilsner malt, Oaxacan malted green corn and Washington white wheat. We hopped Feathers in Ashes in the kettle with Montana Saaz, Zumo, Chinook, Perle and Spalt Select. Our American cellar pilsner was fermented cold with our house lager strain and spunded for natural carbonation.

Some corn-like sugars (a touch powdery, earthy) but also some rich mineral, with light hop character showing a wide range of vegetation. Wonder what the impetus for using corn was? Seems like an odd choice for a cellared pils. But it's mellow and aromatic with nothing weird going on other than the hint of powdered sugar from the (I assume) corn.
Corn seems less prevalent in the flavor than the nose, thankfully. Pretty straightforward, malty, rich, flavorful, balanced pils with an American hop edge to it, though not problematically so. These are some fun/interesting varietals that work with a pils (are more mellow, spicy, etc...).
