For the second NMB collab, we wanted to recreate a timeless dessert from their side of the pond: The Parkin, a dense Spiced Cake known for it’s use of Treacle, Oatmeal, and Ginger. Typically compared to Gingerbread Cake in the US, it is often served with Custard. So we shot a few ideas back and forth on how to recreate this beast, and once again, the team crushed it. (Also, we heard parking in Leeds actually sucks real bad, haha.)
This is exactly what it is described to be: A liquid version of a ooey-gooey Parkin, but with Brandy instead of Custard, and pebbled with Ginger and Cinnamon, with JUUUST enough Nutmeg to bring it all together. Big BAKED GOOD vibes, layered in wet Oaky vanillin and robust Brandy.

Panda thanks to Cloin. Just about clear dark and slightly oily looking brown beer, small pale tan head that doesn't last. Relatively light palate, some mild viscosity, good fine minerally carbonation. Smooth but fair thin bodied dark malts, for the style anyway, a nice soft dark malt cream and good ice cream van chocolate syrup. Wonderful ginger cake. The best richest ginger cake you ever tasted but, in liquid form. Smooth and fairly light finish leaves a ginger cake linger and a little ginger heat afterburn. Corking. If I could find ginger cake that tasted like this! And then add a thin icing or chocolate. Yum.

Can at home, from HOTM online, 22/11/2025.
Black with a fast collapsing khaki head.
Nose is treacle toffee, spice, dark malts, molasses, toasted brown sugars.
Taste comprises toffee, herb, mellow roast, ginger snap biscuit, brown sugar melt, molasses, dates, cinnamon.
Full bodied, oily feel, semi drying close with a light rising boost.
Fun impy that delivered on the Parkin promise ... if a touch overly sweet.
