Astral Sunrise is loosely based on the Canterbury Scene blend from year 3. Around 90% of the beer in the blend was fermented with 100% English ale yeast. The English ferment produces more fruity esters than my typical ferments. These fruity esters can bring a lot of character to barleywines and drastically change how the caramel/toffee note presents its self. Many of the components in this blend were double barrel aged. Think of this as a variation on Electric Roads with a slightly different fruit and caramel character.
