This beer has been on an epic 3-year voyage, sailing the seas of time in a vessel of oak. We brewed it in 2022 with our pals at Ile Sauvage with hopes that we'd see it again the following year. This stubborn guy was slow to move, but it's been worth the wait. Richly malty and complexly sour, this beer is an excellent expression of the coming together of Dageraad and Ile Sauvage.

Soft, amber-brown colour, has some caramel-toast, lighy acetic, a bit of wood, fits the style but doesn’t have any standout elements.

On tap at Dageraad, pours a cloudy dark amber brown with a small beige head. Aroma has a nice dark cherry character, gentle oakiness, and light balsamic. Flavour is complex, with dark cherries, moderate acidity, balsamic notes, and a touch of brown sugar. Good balance of the sugars with the acetonic notes. Complex and well-constructed. Excellent.

Taster.
Aroma: some balsamic and bready notes with light sourness and sweetness.
Taste: along the same lines, more on the balsamic side with some light bready notes. Low to moderately acidic.
Overall: decent representative of the style 👍

On tap at Dageraad. Pours a dull murky brown with an off-white head. Dried berries, raisins, and some balsamic notes on the nose. Flavour has a moderate level of acidity with lots of raisins and dried fruit giving it that nice sour red character. A healthy dose of balsamic throughout the flavour, though thankfully not coming off very acetic. Some bitterness coming through at the very end that complements it well. Nice, I really like this.
