In the past we have aged Pandemic for about 6-9 months and then blended it with fresh Southern Belle to create a big, boozy, and rich concoction. This time around, we’ve taken it a bit further using Pandemic that aged for almost a year and a half in order to pull every drop from it’s rye barrel captors. We then blended it with fresh Ebony and Ivory to add additional chocolate notes and rounded vanilla character to the big roasty rye facets derived from the barrel. This is a great bottle to lay down and cellar, or share with family and friends over the holidays, the choice is yours.

750 ml corked & caged bottle shared by a friend. Thanks Ben! Dark brownish black with thin light tan head. Aromas of whiskey, spices, alcohol, dark chocolate, dark fruit, light smoky and roasty notes, musty oak. Tastes of dark chocolate, dark fruit, whiskey, light spice. Medium-full body with a dry finish.

Bottle shared at the WWWW Mid Atlantic Summer Beer Tasting. Clear dark brown, thin head. Aroma of brown sugar, dark fruits. The taste is dark fruits and toffee. Medium bodied, low carbonation.

From a 22 oz bottle at the WWWW RB tasting it is a dark brown color black with a slight head. The aroma is bourbonesque and the taste is a strong sweet bourbon

Bottle courtesy of iphonephan, thanks! My first Illuminati beer. Clear maroon brown color, scant tan edge head. Aroma of vanilla, whiskey. Taste is somewhat boozy coffee, dark fruit, subtle spice. Decent.

750ml bottle pours a very murky caramel brown with some ringing head. Nose has a ton of butterscotch and booze, malt, caramel. Flavor follows, butterscotch, booze, raisin, malt, caramel, a little salty, mild leather. Oily finish.
