The wild side of 2 sister ciders featuring the same apple blend from New Hampshire's Poverty Land Orchard. We brought in 2 totes of juice. One was fermented with native yeast (this one) and one was fermented with a clean wine yeast (Like A Contented Ardor). To taste them side by side is to better understand the character that "natural" or "spontaneous" fermentation provides. Which will you prefer? Re-fermented in the vessel with wildflower honey for soft effervescence in the vein of Basque cider.
