Diploma Master Daniel Carey’s newest IPA, Wild Bitter is brewed with Wisconsin Malts, Yakima Citra and Sterling hops. Wild Bitter was aged for nine months in the brewery’s Wild Fruit Cave, dry hopped of Slovenian Savinjski, followed by spontaneous secondary fermentation and a final third fermentation in the bottle.

Bottle sample at GTMW/ Hazy golden color, large fluffy white head. Aroma is dusty, peppery, light funk. Taste is fruity with decent barnyard. The combo works.

Bottle. Pours a cloudy orange with small white head. The aroma is strong pine, orange peel, funk. Similar flavors to nose, juicy, light bitterness, very good.

Bottle, shared by Bob, thanks for sharing this hard to get beer. Oddly, I get some litter box in the aroma, as well as pungent hops. Hazy yellow color. very dry and bitter. Some yeast. I find the flavor very dry and it is also dry on the palate. Brett is there, again, dry finish. Some grain flavor, and a fair amount of hops. Sort of an odd beer, hard to classify I would say.

Bottle shared by Bob, thanks! Pours a cloudy golden orange with a white head that dissipates to the edges. Aroma has a musty graubs wutg a light tart fruit notes and a bit of urinal cake. Flavor has light tart fruits with grass, a bit of funk and a slight urinal cake note.

500ml bottle. Unfiltered dulled orange-tan body. Foamy, steady, white head. The aroma is a unique, funky mixture of Imperial Pils and Wild Ale, some harsh lemon-lime pine sol tones that follow in the flavor. Quite a weird beer. Tastes Belgian in that respect, kind of has fresh Orval nuances, but way amped up in strength of course. Almost has a licorice or minty liqueur thing going on at times. An oddball beer with some weird flavors and aroma, but has a nice mouthfeel that helps it through. Kind of what you wish you’d see from NG in a less celebrated release. Fun and interesting to try, but not that great.
