Human Construct is a Golden Blend (4yr Blend) finished in freshly emptied Earl Grey Gin casks from The Family Jones distillery. This complex and contemplative assemblage was created in collaboration with our friends Chris and April of Brewery Novalis.

Bottle.
A- Copper color, slightly hazy liquid, no head.
A- Mile juniper berry, lemon, funk, oak, mild caramel, subtle wet hay.
F- Oak, lemon, Brett funk, mild juniper, earl grey tea, subtle gin barrel.
T- Medium body, average texture, average carbonation, tangy finish.
O- I am so curious what age would do as I drank this super fresh. Definitely get the earl grey bergamot flavor. This was a solid lambic that would hold it's own against the big names of the style. Surprised and delighted with this one.
