We’re rapidly approaching exactly where we wanted to be when we first started this brewery almost eight long years ago.
In our opinion our beers have never been better than they are now, and it’s through tips, tricks and techniques our brewers have in their arsenal, alongside exclusive access to the very best and most in demand hop varieties in the world today. On Hold is a celebration of everywhere we’ve been and where we’re headed in the future with our brewing.
A cornerstone hop to the brewery in Simcoe lays the foundation, with a hop that found its way into our brewing along the journey in Vic Secret, before a final flourish of one of the most in-demand liquid hop varieties Maui Nelson Subzero Hop Kief sends this beer into the stratosphere. Potent flavours and aromas of pink grapefruit, nectarine, passionfruit and pineapple dominate, before a whisper of cannabis smoke gives a complex herbal edge. Simply incredible.

Can. A light haze on this yellowish gold beer, small bubbly pale cream colour head. Light fairly airy palate, a mild dryness, decent fine minerally carbonation. Light smooth creamy sweet malts. A pleasant hop array. Tangerine and mandarin. Soft orange, touches of modern Simcoe pineapple and mild Nelson grape. Soft finish. Nice IPA, think it could do with a little more hop edge but, it's fairly bright and juicy and goes down easy.
