Bifrost is a Norwegian Farmhouse Ale that takes its name from the mythological rainbow road traveled by the gods. Adhering to tradition, we fermented this beer with kviek yeast, an aromatic strain whose lineage is an unadulterated representation of farmhouse brewing. Atop it’s rustic grain bill aromas of resinous pine, dried citrus peel, and red berries swirl from an addition of juniper berries and spruce tips in the boil. Finally, a small charge of Saphir hops adds subtle notes of dark currant and black tea. We find that traditional recipes such as this collapse the gulf of history and connect us through flavor to our past.

Winter 2026 can drunk 1/2/26, as pictured.
Lightly funky (sulfur) yeast character with some softer, bland wheat and light tropical fruit that isn't sweet. Soft white pepper and no crude phenols/esters. Love how little sweetness or big fruitiness comes through; it's just a lot of dry, subtle tropical fruit skin, pepper and wheat.
Bright and malty with white pepper undercutting fresh, juicy pomelo. Soft wheat and lightly sweet honey-like maltiness. Really nice balance from peppery hop and yeast. Soft funk lingering along green fruits. No crude yeast character whatsoever and not too much white pepper character. Malt and fruit are expressed sensationally well.

Pours a lightly hazy, pale lemon-gold, with minimal head. Aroma is brett yeast, some citrus, pine. Flavors follow, with some pepper in the mix as well. Clean, crisp mouthfeel. This is a lot better than I expected it to be...
