Drink And Ski is a non-alcoholic sour beer in the gose style, packed with a generous amount of fresh ginger, roasted lemon, and schizandra – an adaptogenic plant often called nature’s vitality booster. Schizandra, also known as the “five-flavour berry”, is a true botanical rarity – its berries offer a complex taste that combines sweet, sour, bitter, salty, and spicy notes. This remarkable complexity comes through in the beer, where the herbal finish balances the zesty ginger and juicy lemon. Roasted lemon adds a soft caramel depth that rounds out the sharpness of the ginger. We sourced the schizandra thanks to a collaboration with the National Centre for Agricultural and Food Research – CARC, an institution focused on adaptogenic plants. They kindly provided us with the berries and will also be analyzing the beer to explore how the beneficial compounds transfer into the final product.
