From the 1.8l bottle at the brewery restaurant. Aged Daiginjo brewed in 1990. 20 years old!
Aged aroma with caramel, funk, barrel, and sherry. Oxidized but not overly so. Almost nutty flavor, with peaches, almonds, pear, caramel. Fruity, with sherry notes. Amazingly smooth and rounded. Wow! Maybe one of the best sakes I’ve ever had. Very much worth the ¥850. As far as I know, this is only sold at the brewery restaurant, and you can only buy 120 ml per customer!
