Taster at Jam. Made like it would have been made around 1700. Slightly salty nose, sweaty, with grapefruit. Enormous flavor of passion fruit, big and lovely fruitiness, with a nice tartness. Shocking and interesting fruit flavors, hard to believe really. Also, I can’t imagine that sake in 1700 was this refined. They are obviously doing some things like in the old days, but the overall quality is far too high to imagine they could do this then!
