Hiyaoroshi is sake brewed in early spring, stored during the summer and released between September and November when the outside temperature and the temperature of sake is the same. It is released without being pasteurized before bottling. The sake has a deep matured aroma and complex compared to freshly brewed sake in the spring. The release of the Hiyaoroshi has become a seasonal sensation in Japan around this time of the year and we are happy that we can replicate this excitement in Norway!

Clear pale golden (almost no color at all) color with no head. Moderate intensity in the aroma. Something that reminded me of sherry popped up in my nose. Not the typical junmai stuff aroma. Medium + body. Oily texture and a decent sweetness. Mild acidity. Rice, some spices and a pleasant fruity flavor. Dangerously well masked alcohol.

Still, straw to pale yellowish golden. Clear. Oily along the sides of the glass.
Ripe fruit, plums, pears, next to no cooked rice, some alcohol in the nose. White wine, grass, chill autumn garden lawn.
Full-bodied, pleasantly warming, smooth, oily.
Very fruity flavor, complex and not especially alcoholic, especially considering the ABV. Rice in the far back, just a hint. Sweetish, yet mostly on the dry side. Hints of fruit candy, but without that cloying feeling, off course helped by the alcohol and dryness that wash it away.
First drunk as an aperitif and with maki and nigiri, but works better as an avec. Or just in the favorite chair with a good book or music. Really delicious and complex this one. 160916
