Cup at the Kyoto 2016 Nihonshu Jorei Summit. This is a 90% polished junmai that is yamahai or kimoto, made with moto from a shrine in Hyogo. Very acidiy, sharp, fruity nose. Estery, and reminds me of a weizenbock. Yellow. Fabulous, estery flavor, cloves, banana, apricot. Never had a sake that was so much like a weizen, well a bock! And it works. Lovely.
