This sake, made by the Kumamoto Institute for Sake Brewing, is called ‘special’ because it is made by a special type of sake rice known as ‘Shinriki’, which has been polished down to 58% and brewed with nothing else but a little rice koji.

Pours clear colourless. Aroma of sharp yellow fruits, great mellow aroma, rice, some alcohol. Taste of strong mellow, yellow fruits, yeast, rice, nice stuff!

Bottle from japancentre.com. Fresh smooth slightly sweetish rice in the nose. The Saké starts fresh and rich. Very soft and mild with a Kumamoto-typical rich smooth and slightly sweetish rice body. Intense with hints of alcohol. Long rich and slightly sweetish rice aftertaste with lots of fruit - yellow pears, honey-melon, smooth and intense rich flavour with a slight sweetness remains on the tongue.
Nice and typical in flavour for that region.
