This is a kind of Yoshinosugi Tarusake and also has extremely characteristics of the Yamahai style. Omachi rice is the oldest existing pure breed and is said to be the ancestor of superior sake rice

22/10/2024. Bottle pour at JSS Japanese Sake & Shochu Tasting-room, Tokyo. 14.0% abv. Pours clear colourless with no head. Aroma is fragrant, lightly woody, twiggy, cedar, melon. Moderate sweetness, medium bitterness and body. Very smooth, no carbonation. Mild elegance.

Bottle pour at Asano. Shiny and clear. Huge cedar nose, light vanilla, lemon. Ok level of taru flavor, not too much cedar to overwhelm but not a lot of yamahai character and a bit thin.

Bottle at home at first didn’t buy thinking it was other Choryo taru but my sake guy said oh no no this is new Yamahai version he then explained the process etc and it was quite interesting. Very clear pour. Nose is light cedar and florals. Tastes of cedar, light vanilla luckily none of that sweet garbage you get with many tarus, floral, hint of stone fruit. Medium bodied. Really delightful from a style that you don’t always expect quality from.
