Junmai-shu is made only from rice, rice koji and water. Junmai-shu tends to have a rich taste with a mellow flavor that keeps the original taste of rice. Taking tradition into the future: Rai - 大関 ライ 純米酒 is created using a new age labor-intensive production process with the yeast, koji and lactic acid being the keys to this rich brew. Timing of the additions to the starter mash influence the flavor and aroma. Ozeki exclusively developed a new way of making sake to bring out the savoriness while sustaining easy drinkability. The unique brewing process of RAI creates a pleasant earthiness that is not too bold nor meek with subtle hints of caramel in the nose. This Junmai Sake has a smooth taste on the palate followed by a rich and mellow aroma. A straightforward flavor that can be enjoyed for hours. Awarded The Monde Selection Gold Award 2016. Drank cold (recommended temperature). The color degree is a hint of yellow. The texture is creamy. The olfactory intensity is high and appreciable. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas finds caramel, vanilla, white peach and melon. The first impression of intensity in the mouth is of medium strength’s sake. The aroma on the tongue is rather dry. The body is structured. The taste intensity is high, and the taste persistence is good and long. On the palate the body is strong, and the aftertaste is intense. The taste is pleasant. The final mouth sensations are of drinkable sake. The finish is dry and clean. Hints of vanilla, peach and apricot arrive on the palate.
