One will first notice the soft taste unique to the Omachi rice, one of the finest rice used when brewing sake, as well as the comforting fragrance of a Ginjo. With the perfect balance of sweetness, acidity, and umami as the result of the harmony created from the rice and natural water, this sake continues on as one of Kozaemon’s most popular labels. It has a rich flavor, a full taste, and a smooth texture, and after swallowing it has a clean finish. Rice type: Omachi sake rice. Polishing ratio (seimaibuai) : 55%. Drank warm. The consistency of the liquid is clear, colorless and transparent. The olfactory intensity is normal and sufficiently prolonged. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas is directed towards peach, wood, plum and mushroom. The first impression of intensity in the mouth is of medium strength’s sake. The aroma on the tongue is slightly dry. The body is full. The taste intensity is high, and the persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. The roof of the mouth carries notes of cooked rice, pear, mushroom, spring water, gin, honey, popcorn and mineral. VARIATIONS Plus, drunk cold (My vote 6.8/10). The nose taste - secondary aromas recognizes hints of cooked rice, dried fruit, mineral, pineapple, white-fleshed peach and umami. The first impression of intensity in the mouth is of robust sake. The aroma on the tongue is rather dry. The body is full. The flavor intensity is high, and the duration is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. The palate receives hints of condensed milk, vanilla, fruit, dried apricot, mushroom and umami. VARIATIONS Plus, drunk at room temperature (recommended temperature) (My vote 6.4/10). The olfactory intensity is normal and the way it persists is sufficient. The nose taste - secondary aromas lean towards dried apricot, mushroom, honey, melon, anise and white-fleshed peach. The first impression of intensity in the mouth is of robust sake. The aroma on the tongue is rather dry. The body is round. The taste intensity is normal, and the taste persistence is sufficient. On the palate the aftertaste is of medium intensity. The final mouthfeel sensations are ready to drink. On the palate there are hints of vanilla, fruit, mushroom, spring water, gin, white flowers and umami.

Bottle pour at Before 9. Clear and viscous. Spicy nose of koji with pineapple. Flavor is lots of pineapple, nice and spicy finish. Crisp and fresh.
