百々登勢 三十年. Long-term aged sake. The harmony of the rich umami that matures in amber and swells three-dimensionally in the mouth is exquisite. It is also compatible with relatively thick dishes, meat dishes, dairy products, nuts, dried fruits, and sweets such as chocolates, and is also ideal for aperitifs and desserts. Rice type: Yamada Nishiki 25% (from Naka-ku, Taka-cho, Hyogo Prefecture) and Kinmon Nishiki 75% (from Kijimadaira, Shimotakai-gun, Nagano Prefecture) sake rice. Drank at room temperature. The consistency of the liquid is crystalline. The color is deep amber tending to be reddish, practically similar to the color of whiskey. The olfactory intensity is very high and rich. The continuity is considerable and long. The taste on the nose finds impressions of caramel, tobacco, pear, spices, cognac and ripe fruit. The first impression of intensity in the mouth is of robust, vigorous and solid sake. The aroma on the tongue is very dry. The body is structured, not heavy but ductile. The taste intensity is very high, and the taste persistence is good and long. The taste is enjoyable for the sake that has its own personality. The final mouth sensations are of dangerous drinkability, for an excellent sake that is absolutely to be drunk. The aroma in the mouth bears signs of caramel, tobacco, cognac, smoke, dried fruit, pepper, oak, soy, white flowers, umami, caramel, bread crust, peaty and warm.
