For our fortieth saison we wanted to brew a special barrel-aged offering. This deep, dark black saison was whiskey barrel-aged for four months during which time it received green and black peppercorns. Spicy with round notes of whiskey sweetness, Saison XL makes the perfect night cap for the crisp spring nights.

4 oz pour on draft at ChurchKey for the Wicked Weed DC Debut event. Poured a dark brownish color with a small tan head. Aroma was lots of roasted malts, some whiskey notes, woody barrel notes. Flavor was roast, whiskey, woody. Strange.

Some bitterness. Roast, burnt hay, thick creamy pour with some mocha. Some caramel. Tap at Churchkey.

4 oz pour on draft at ChurchKey for the Wicked Weed DC Debut event. Dark brownish with beige head. Aromas of dark fruit, licorice, whiskey, spice. Tastes of dark fruit, spice, herbs, light whiskey. Medium-light body with a dry finish. Not quite what I was expecting for a saison but solid.

Draft. Dark clear maroon color, beige head. Nice aroma of dusty toasted brownie crumbs. Taste is boozy cocoa and coffee.

Draft. Deep brown body with a beige head, mostly lasting. Aroma of whiskey, pepper, wood, cherry and vanilla. The flavor is moderately sweet and lightly bitter. It finishes moderately sweet and lightly to moderately bitter. Medium to full body, velvety texture, moderate carbonation. Alcohol and black pepper finish. Taste of whiskey, chocolate, tart cherry, light smoke. Not sure why this is classified as a saison. It’s sweet with low carbonation and it’s difficult to pull any Belgian yeast aromas or flavors from it. But as a barrel-aged stout, which it certainly tastes like, it’s really good.
