菊正宗 香醸 しぼりたて 純米酒. Freshly pressed Junmai Kojo Sake, Namachozo sake (pasteurized once at bottling) shiboritate (freshly squeezed) from Hyogo, light and refreshing, with an almost white wine-like character. A special proprietary yeast strain produces high levels of ethyl caproate esters known for a green apple-like aroma, what sake geeks call “kapukapu.” Best stored in the refrigerator, this is a smooth and refreshing unaged sake, perfect with sushi or a range of delicate dishes. Yeast: HA14 Yeast. Polishing ratio (seimaibuai) (精米歩合): 70%. Sake Meter Value (nihonshudo) (日本酒度): -2.0. Acidity: 1.6. Serving temperature: chilled. Bottle size: 300 ml, 720ml, 1800ml.

(My vote 7.2/10) Drank cold. The consistency of the liquid is clear, colorless and transparent. The olfactory intensity is high, and the persistence is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas is directed towards peach, dried apricot, oak, mineral and mimosa. The first impression of intensity in the mouth is of strong and powerful sake. The aroma on the tongue is rather dry. The body is full. The taste intensity is high, and the persistence is sufficient. The taste is pleasant. The final mouth sensations are ready to drink. The roof of the mouth carries notes of chestnut honey, wheat, banana, white pepper and melon. VARIATIONS Plus, drunk at room temperature (My vote 6.6/10) The olfactory intensity is high and the duration is good. The nose taste - secondary aromas find hints of vanilla, apricot, kiwi mushroom, umami and white mushrooms. The first impression of intensity in the mouth is of medium-strength’s sake. The aroma on the tongue is slightly dry. The body is full. The taste intensity is normal and lasts sufficiently. The taste is pleasant. The final mouth sensations are ready to drink. Hints of vanilla, peach, white melon and strawberry arrive on the palate. VARIATIONS Plus, drunk warm (My vote 7.0/10) The olfactory intensity is normal and the duration is sufficient. The nose taste - secondary aromas recognizes characteristics of white peach, dried apricot, mimosa and mineral, for a delicate aroma. The first impression of intensity in the mouth is of robust sake. The aroma on the tongue is medium dry. The body is full. The taste intensity is normal and lasts sufficiently. The taste is pleasant. The final mouthfeel is ready to drink. The roof of the mouth features hints of vanilla, strawberry, spring water, resin, spices and umami.

Bottle, at Saichi Sushi, Århus. It pours a clear, lightly oily body. Still. Mostly fruity aroma, with cucumber, some cellar, rice and alcohol. It's full-bodied, warming and smooth on the palate, flat. Sweet candy flavor, perfumed, with honeydew melon, cucumber notes and some woody hints. Lasting sweet and fruity finish. Interesting and playful, but I'm not sure this will match the food very well. A few minutes later I learned that it sure did. 231109
