This unblended sake is characterized by a sweet and rich taste with a rich aftertaste, with a freshness reminiscent of citrus fruits and a sweet scent like white clover. You can enjoy it on its own, or add ice so it's on the rocks, mint to make it refreshing, or carbonated water to mix it with soda. Ichinokura Sake Plus (also written Sake +) is a kijoshu sake, which means it is produced by replacing part of the water with other sake. In this case, a sake with a strong acidity is added. The kijoshu method reduces the activity of the yeasts and leaves a lot of sugar intact, thus giving an extraordinary sweetness. The rice chosen for this sake is Hitomebore, a table rice that is very resistant to cold and highly appreciated for its aromas, richness and sweetness that it is able to release. The yeast used is Association 1901, which has a attenuating effect on the aroma of the sake. Thanks to the mix of quality and versatility, Sake Plus won the gold medal in its category at the 2023 International Wine Challenge. On the nose, Sake Plus presents notes of citrus, especially lemon and orange, accompanied by notes of white clover, strawberry, watermelon, freesia and honey. On the palate we will find sweetness, complexity, umami and a long and velvety finish. The aromas range from citrus to crab apple, to steamed chestnuts. We will also find a strong acidity. Rice type: Hitomebore rice. Polishing ratio (seimaibuai) (精米歩合): 60%. Sake Meter Value (nihonshudo) (日本酒度): -40. Serve on the rocks, with mint or with soda. Bottle size: 720 ml.

Drank cold. The color is straw yellow. The olfactory intensity is normal and lasts sufficiently. The nose taste - dominant aroma is of malted rice Koji. The nose taste - secondary aromas is directed towards vanilla, spring water, popcorn, white flowers, cereals and rice flour, for a delicate and light aroma. The first impression of intensity in the mouth is of powerful sake. The aroma on the tongue is rather dry. The body is round. The flavor intensity is high, and the persistence is sufficient. The taste is pleasant. The aroma in the mouth bears signs of cooked rice, wheat, herbs, honey, almond and umami.
