川鶴 No.315 OLIVE EAST. Produced for Shibataya Liquor Store Co., Ltd. in Tokyo, Shibataya (Thailand) co.,ltd. in Bangkok and Shibataya Italy srl in Milano. This sake was born from the encounter between Sanuki olive yeast, a yeast discovered in the Seto Inland Sea, also known as the Eastern Mediterranean Sea, and Yamada Nishiki from Tanono, Kagawa Prefecture. The sake quality that expresses natural climate and characteristics has a beautiful, green aroma, rich, fine acidity, and delicate sweetness. This particular yeast, once used in the sake fermentation process, gives the final product a fresh flavor and unique aroma, with notes reminiscent of Muscat. Color: Transparent, subtle lemon yellow scent. The fragrance focuses on a refreshing white grape scent, with a sweet scent of white flowers and guava. Taste: Smooth texture, strong umami that pairs well with Western cuisine. After the sweetness, there is a refreshing aftertaste with an elegant, lively citrus acidity. Drank cold. The consistency of the liquid is clear, colorless and transparent. The olfactory intensity is high, and the taste continuity is good. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas recognizes hints of melon, almond, white flowers, olives, umami and mineral. The first impression of intensity in the mouth is of powerful and robust sake. The aroma on the tongue is rather dry. The body is full. The taste is high and the persistence is good. The taste is pleasant. The final mouth sensations are of drinkable sake. The aroma in the mouth bears signs of vanilla, peach, dried apricot, spring water, spices, olives and white flowers, for a fruity aroma.
