作 恵乃智. Written by Eno Tomo. Toji: Tomohiro Uchiyama. A rich, sweet and gorgeous aroma similar to that of a pear. A smooth, sweet and robust flavor with a rich umami taste. A crisp aftertaste that fades away smoothly with a swell of sourness. This Junmai Ginjo sake is the pride of our brewery, with an exquisite balance of these qualities. It can be enjoyed either chilled or warm. Rice type: Domestic rice from Mie. Polishing ratio (seimaibuai) (精米歩合): 60%. Sake Meter Value (nihonshudo) (日本酒度): -1.0. Acidity: 1.4. Drank at room temperature. The consistency of the liquid is clear, colorless and transparent. The olfactory intensity is high, and the duration is good. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas is directed towards vanilla, melon, pineapple and mimosa, for a fruity aroma. The first impression of intensity in the mouth is of powerful sake. The aroma on the tongue is rather dry. The body is structured. The taste is high and the persistence is good. The taste is pleasant. The final mouth sensations are of drinkable sake. The taste is given tones of white peach, dried apricot, strawberry, coconut, mushroom, spring water, spices, umami and white mushrooms.
