In Japanese, “Oni” means “demon” and “Koroshi” means “to kill”. For this reason, when sake is particularly dry and sharp, it is often labeled as “Onikoroshi” to symbolize its intensity and strong character, so much so that it is considered capable of “killing a demon”. The decidedly dry character of this sake is also given by the combination of two types of rice, Dewanosato and Dewakirari, both suitable for creating a clean, dry and short taste, which can be reminiscent of white wine and has fresh and fruity notes. Drank at room temperature. The consistency of the liquid is clear. The color is straw yellow. The olfactory intensity is normal and lasts sufficiently. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas are directed towards vanilla, herbs, mushrooms, spring water and spices. The first impression of intensity in the mouth is of strong and vigorous sake. The body is full. The flavor intensity is high, and the persistence is good. The taste is pleasant. The final mouth sensations are of drinkable sake. In the mouth the aroma is that of vanilla, dried apricot, honey, spices and umami.
