Kidoizumi specialise in their traditional Hot Yamahai fermentation method using natural yeast. The technique gives their sakes vibrant acidity and depth of flavour, making them delicious when young and suitable for aging for decades.

This is that Hot Yamahai starter mash, juicy and tart with huge body, that Kidoizumi uses in all its ferments.

Bottle at Ante, Newtown. 2023 Vintage. Golden colour, no head and aroma of rice, caramel, honey. Taste is sweet, rich, rice, caramel, honey, with some tangy and acidic notes. Medium bodied, low carbonation, sweet honey-like finish. Quite drinkable.

22/10/2024. Bottle pour at JSS Japanese Sake & Shochu Tasting-room, Tokyo. Pours clear almost colourless, just a slight gold tint and no head. Aroma is citrusy, lemon, melon, caramel, rice water. Moderate sweetness and bitterness with light tartness. Moderate body, smooth, no carbonation. Light acidic finish. Would be good with seafood.
