Phantom Ship is an exciting Belgian-style tripel aged in bourbon barrels. Goldenrod in color with a dense head and creamy mouthfeel, this robust, bold brew presents phenolic flavors of white pepper and peach skin from the warm fermentation, along with vanilla and subtle spiciness from the bourbon-barrel aging.

4 oz pour on draft at ChurchKey. Hazy orange with off-white head. Aromas of caramel, honey. Tastes of caramel, honey, floral, herbs, spice. Medium body with a dry finish. Donβt really get much of the bourbon.

22 ounce bottle into chalice, bottled on 2/1/2015. Pours slightly hazy/cloudy bright orange color with a 1 finger dense off white head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of apricot, pear, apple, white grape, light banana, pepper, clove, honey, biscuit, vanilla, oak, herbal, light bourbon, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast, bourbon barrel, and pale malt notes; with good strength. Taste of apricot, pear, apple, white grape, light banana, pepper, clove, honey, biscuit, vanilla, oak, herbal, light bourbon, and yeast earthiness. Fair amount of peppery yeast and oak spiciness on the finish; with lingering notes of apricot, pear, apple, white grape, light banana, pepper, clove, honey, biscuit, vanilla, oak, herbal, light bourbon, and yeast earthiness on the finish for a good bit. Very nice complexity and robustness of fruity/spicy yeast, bourbon barrel, and pale malt flavors; with a great malt/yeast/barrel balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth and lightly creamy/bready mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a damn nice barrel aged tripel style. All around great complexity, robustness, and balance of fruity/spicy yeast, bourbon barrel, and pale malt flavors; and very smooth to sip on for the big ABV. A very enjoyable offering.

Doesnβt quite taste like a trippel but the barreling is at least done well. Pours dark amber with OK head and lacing. Some booze and a little whiskey. Sweet finish with bitter oak tinge. Tap at whole foods.

22 oz bottle thanks to Chalumeaux , much thanks TJ! Almost a clear amber color with thin head in my Bourbon County Snifter. Aroma is just wonderful, Belgian yeast showing a banana ester, over ripe peach and a mild bourbon barrel. The flavor is a spot on the aroma with a subtle yeast character. It reminds of the completely opposite end of Allagash Curieux. Big yeast with a subtle Barrel note. Very tasty, going to find another bottle. Great brew.

Poured from bottle. Pours dark golden color with thin white head. Aromas of caramel vanilla bread and yeast. Taste is sweet with vanilla bananna and hints of bourbon. This is a nice beer to cellar for 6 months.
