Built around the traditional deep red hue and the iconic C-hop trio of Chinook, Cascade, and Centennial, our version keeps things true while bringing in a few modern twists. We used Gambrinus Mars Malt to hold the classic color but finish dry, then loaded the kettle and fermenter with Crosby Hops’ Deep Cut Cascade CGX NUVO—cryo-frozen fresh hop powder that delivers a concentrated burst of citrus and pine. Michigan-grown Mackinac, a Chinook offspring, adds a bright tropical layer on top of the bold bitterness.
