Hidden behind the dark exterior of our Covert h’Ops Black IPA are layers on layers of complex hops. A strong bitterness of pine and grapefruit from kettle additions of CTZ, Northern Brewer, and Cascade hops compliments flavors of dark chocolate and roasted espresso from the malts, while a generous dry-hopping of Mosaic and Cascade hops lends an unexpected tropical and floral hop aroma. Covert h’Ops Black IPA is a perfect tribute to the secret intelligence operators who used to occupy our brewery buildings!

Sampled at the brewery, pours a fairly dark brown, slightly watery, with some lacing off white head. Nose is quite nice and spot on for style, pine and soap and bread crust. Flavor has more roast, chicory, some light pine needle, toast. Dry finish. Very drinkable.

Keg at the brewery, 6/10/15. Dark reddish brown, large creamy tan head, good retention. Aroma of chocolate, coffee, citrus hops. The taste is roasted malt, chocolate, coffee, mild citrus. Medium bodied, lingering bitterness.

Draft at the brewery. Poured a very dark black color with a wispy tan head. Aroma is notes of roasted malts, some earthy hops, some light chocolates. Flavor is notes of malts, roasted malts, bitter chocolate. Resin. Creamy notes. Pretty tasty.
