Bruxellensis is refermented for several months with a wild Brettanomyces yeast originated in Brussels. Amber with copper reflections, its fruity attack (pineapple, red fruits) is supported by hop flavours in dry hopping, and by complex, almost animal notes of old leather. It then develops a rich malty note with biscuit accents and a persistent fruity/candied flavour. Its finale is dry and bitter, its character is unique.

Many thanks for this sour beer to tderoeck. Piekna piana tak wielka jak lawiny w Himalayah. Stoji tak dlugo niczym meskosc po zazyciu 100 tabletek viagry. Jasno bursztynowa barwa, niewiele odbiega jakosciowo od wersji Reserved. Pachnie sycylijskimi pomaranczami, w smaku cytrusowe, kwasne, biale porzeczki, cala masa ich, zdeptane stopami, super posmak wytrawny i kwasny.

330ml bottle from Hoptimism, advent beer day 19. Pours opaque golden orange with a huge beige head. The beer literally wanted to climb out of the bottle on opening. Aroma: moderate malty, citrus, herbal & bretty. Taste: moderate sweet & bitter, light acidic, with bread, lemon, apple all dominated by wave after wave of brett funk. Medium body, enormous carb, dry light tart finish. Brett will eat itself. Mental but great!

Flaska från SB. Sakta men säkert skummande flaska i vanlig ordning för en brettad öl. Orangedisig med högt, fluffigt vitt skum. Brettigt och humligt (i den ordningen) i doft och smak med toner av grape, stall, citrusskal och zest, yuzu, litchi, ljusa vindruvor och ett ganska jordigt inslag, typ jordkällare. Förutom spetsigheten och torrheten från bretten så är kroppen förvånansvärt mjuk och len och lämnar en fin, mjuk havrekänsla i munnen efteråt. Väldigt välgjort och välbalanserat. Precis som en brettad pale ale bör va.

Flaska från SB. Smak och doft av humle, malt, jäst, citrus, stall, hö, peppar, gräs med toner av aprikos och persika. Bubblig, lagom sötma, torr, fina rena smaker, bra balans och beska. Gott!

Orangebrungrumlig med stort och stadigt skum. Torr och syrlig brettdoft. Även smaken är torr och syrlig med tydlig brettkaraktär som hänger i länge.

Huge gusher, half of the liquid is instantly gone. What's left is hazy/murky orange, with a big frothy head that shows good retention and lacing. Pretty intense but not very clean aroma shows sugar and candied fruits (mostly peach, orange) with funky notes (can't actually find a precise descriptor) and a bit of herbal/grassy counterpart to a mostly sweet aroma. Taste is sweet in the mouth as the smell suggested, but it's balanced enough by a hint of funkiness/acidity and by some grassy notes in a rather clean finish and aftertaste. Overall that's very nice, intense and very refreshing, though flavours are not perfectly refined. Light to medium bodied with medium to high carbonation in a lively but still very easy mouthfeel. That was very interesting and enjoyable, but showed some flaws.

Ultra Brett overdose on top of a pale ale, makes for a overly dry overly funky thing.
