Barrel-aged wild blond beer with 200 g/L mirabelle plums and peaches.
Limited edition 20 months oak aged single barrel. Mirabelles and peaches were harvested at de Sterregaard at Hedel. The mirabelles were used for maceration directly after harvest. We often reuse fruit for 2nd and 3rd macerations to extract all flavours out of the fruit. In this case we used peaches from a third maceration, which adds a lot of complexity to the beer. These peaches were first macerated for our single barrel Fabel, after which we used them for 2nd maceration of Balsem.

Clear orange beer, practically no head. Aroma: nice, very funky, brett, sour impression, very fruity, peaches, a bit lemony, oranges, nice stuff, a bit dusty. MF: no carbon, medium body. Taste: quite some tannins, dry, a bit lemony, bitter, good acidity, peaches, slightly sweet, very fruity, nice, lemony, wood notes. Aftertaste: dry finish, more peaches, apricots, very nice, vinegar notes.
