Cornish, full juice, wild fermented dry sparkling cider, barrel aged.
A delicious and vibrant cider made from a blend of Yarlington Mill, Norwood, Browns, and Ellis Bitter, handpicked from orchards we manage regeneratively on the South Coast of Cornwall. Wild fermented and aged on lees for 11 months in oak barrels, before spending a further 13 months (before release) ageing in bottle.
We get notes of tropical fruits and fresh citrus, followed by subtle spice and a gentle hint of salinity. Designed to be enjoyed at the table, perfect with anything salty and savoury. Think roasted meats, rich mushroom dishes, cheese, or spicy dishes.

750ml bottle, present from Margaret. Golden colour, white foam head that quickly dissipates to a thin rim and aroma of fruit, apple, funk. Taste is sweetish, fruity, appley, citrusy note, with some leathery funk and drying tannins. Medium bodied, low carbonation, dry funky & tannic finish. Nicely drinkable.
