This naturally sparkling cider is made from Golden Russet apples grown in our orchard. Wild Yeast primary fermentation in stainless steel and neutral oak. Secondary fermentation in the bottle, hand disgorged. Bone dry. 75 cases made.

Bottle from their bottle club. Bigger batch vs last year, but last year had a bunch of variable weather. Sorry I can't find a vintage bottle in the basement to compare.
Pint glass at home with the sorry saps in chats.
Clear & crispy, medium gold, quick soda head.
Earthy, buttery, celery, somewhat savory, orange honey, cooked down bittersweet nose.
Bitter, herbal, hyper veggie, sweet rind, burnt onion, plastic, lingering floral, Play-Doh.
Crispy, fizzy, baked, great texture. Russets have most of what you need out of a good cider but have this overall veggie note you can't shake.
